Did you know that even through prawns look a lot like oversized shrimp, they are biologically different from one other?
You might find that prawns and shrimp vary in taste and texture as well, but the differences are often barely noticeable.
Either way, if you like shrimp, then you will probably like prawns as well. When it comes to cooking, most people treat them the same and they are usually interchangeable.
A favorite Chef du Jour Catering recipe we always enjoy preparing is Prawn Scampi. You can find this item on our Corporate Buffet Menu.
Our Prawn Scampi, which is served in herb garlic butter and olive oil, then combined with pasta, is a definite people-pleaser. We share a version of our recipe below that is easy to prepare.
Whether you are serving this recipe to your family or preparing it for a large group, we are certain that you and your guests will enjoy eating it as well.
Prawn Scampi with Linguini Recipe
- 1 pound of linguini
- 4 tablespoons of butter
- 4 tablespoons of extra-virgin olive oil (plus more for drizzling)
- 2 shallots, finely diced
- 2 cloves of garlic, minced
- A pinch of red pepper flakes (optional)
- 1 pound prawns, peeled and deveined
- Kosher salt and freshly ground black pepper
- 1/2 cup of dry white wine
- Juice from 1 lemon
- 1/4 cup of finely chopped parsley leaves
For the pasta:
- Put a large pot of water on the stove to boil.
- When it has come to a rolling boil, add a couple of tablespoons of salt first, then add the linguini.
- Stir regularly to make sure the pasta separates; cover.
- When the water returns to a rolling boil, cook the pasta for about 6 to 8 minutes, or so that it is not quite done.
- Drain the pasta.
For the prawns:
- Meanwhile, in a large skillet, melt 2 tablespoons of butter in 2 tablespoons olive oil, over medium-high heat.
- Sauté the shallots, garlic, and red pepper flakes (if using), until the shallots are translucent – about 3 to 4 minutes.
- Season the prawns with salt and pepper
- Add the prawns to the pan and cook until they have turned pink, about 2 to 3 minutes.
- Remove the prawns from the pan; then set them aside and keep warm.
- Add wine and lemon juice to the pan and bring to a boil.
- Add the remaining 2 tablespoons of butter and 2 tablespoons of olive oil to the mixture.
- When the butter has melted, return the prawns to the pan, along with the parsley and cooked pasta.
- Stir well and season with salt and pepper.
- Drizzle over a bit more olive oil and serve immediately.
